Cocktails



So, in the time I've been away from this blog some interesting things have happened.  The biggest being Zac, Joe and I turning 40, school, work, etc.  One fun, new thing is that we bought a boat last summer.  More on that later.  
2020 has been an interesting year for everyone.  There is a world wide pandemic that forced the world into a quarantine to try to contain the virus.  Seems so sci-fi to type that out.  To be honest, I am a bit of a homebody so it wasn't too hard for me.  The hardest part was trying to do homeschooling for my second grader, while keeping my 1 year old occupied and somewhat quiet so that my husband can work from home.  No big deal.  It is fine, everything is fine.  😳

What does all of this have to do with cocktails?  (Besides the obvious of needing a vice with the homeschooling and toddler part.)  Well, in quarantine we didn't always want to go to the store if we didn't have to.  So when wine was running low, I turned to the old liquor cabinet.  I am not much of a hard liquor fan.  I usually stick to wine or beer and Joe pretty much only drinks beer or whiskey so our liquor cabinet was quite dusty.  But that changed during quarantine.  I discovered an appreciation for rum, whiskey and gin drinks.  My favorites are the ones with citrus, herbs and egg white foam.  Here are some of my favorite drink recipes.  

Shipwreck Cocktail (pictured above)

1 oz bourbon
1oz aged rum
3/4 oz lime juice
1/2 oz simple syrup
4 dashes angostura bitters
mint garnish

Shake bourbon, rum, lime juice and simple syrup over ice in a shaker.  Strain into collins glass filled with crushed ice.  Add bitters to top and garnish with mint.  



 Sicilian Rose

1 oz aperol
1 oz gin
1/2 oz gimger simple syrup
2 oz rose wine

Stir in pitcher of ice. Strain into coupe.



World Famous Quarantine Cocktail

2 oz white rum
1/4 oz French vermouth
1/4 oz gin
1 oz fresh orange juice
1 oz fresh lemon juice
1-2 drops absinthe (or sambuca)
sugar to taste
egg white

Shake in shaker filled with ice.  Strain into coupe.

Letter to Pumpkin III

Hi.  It's mom again.  It's been a while since I last wrote but things have changed so much.  You and me specifically.  I am in my third trimester now and we are definitely getting bigger.  You keep growing and so does my belly.  I am feeling and seeing you flop and move and turn over in my belly.  Other people can feel you too.  Even though I know it's natural for you, I feel bad that you have to lay upside down in that tiny, cramped space in there.  I definitely can feel your foot.  It likes to pop out on my right side and I like to tickle it.  I can't wait to see that foot out here.  You get hiccups a lot.  It makes me feel bad that I can't do anything to help you, but it also makes me laugh to think of you in there hiccuping.  As for other things, I am all ready for you to be here.  We have your room all set up.  We had a baby shower for you where lots of nice people gave us nice thing...

Rhubarb Crostata

Did you know rhubarb is a vegetable?  I have a hard time picturing something so pretty and perfectly pink as a vegetable, but nature can be deceiving sometimes I guess.  This is a rhubarb crostata, or galette depending on if you are in an Italian or French mood.  Basically, it's a lazy way of making a pie, which is perfect for those easy, summer afternoons.  Rhubarb Crostata 1 9-inch pie crust about 5 stalks of rhubarb, cut into 1 inch pieces 1 1/2 cups strawberries, halved or quartered 1/2 cup sugar (plus additional sugar for top of crust) 2 tablespoons cornstarch (add a tablespoon of water to make a slurry) juice of 1 lemon (optional) egg wash (1 egg + 1 tablespoon water, beaten) Preheat oven to 400.  In a large bowl, add 1/2 cup sugar, cornstarch slurry and lemon juice to rhubarb and strawberries.  Fold gently to combine.  Roll crust to 9 inch circle on a sheet of parchment paper.  Transfer parchment to baking sh...
