Pancakes

I can't believe I've been blogging for about a year and have yet to post a true breakfast recipe!  I am definitely a breakfast person.  Most mornings, I don't think I'd get out of bed if it were not the allure of breakfast calling me out from under my warm and cozy blankets.   Not to mention the fact I'd be a shaky, cranky mess come noon if breakfast weren't part of my day.  So I've never been able to understand the people who don't eat breakfast.  So for all you non breakfast people out there, if you had this stack of pancakes to wake up to, you'd probably hop out of bed a little quicker now wouldn't you?  What if I told you whipping up a stack was a cinch and takes hardly any time at all? 

Pancakes are so easy and quick, they are really idiot proof.   If you can mix, you can make these.  I like to assemble the dry ingredients the night before so that all I have to do is add the wet ingredients, mix and cook.  This batch makes about 12 pancakes.  I like to make the whole batch on a weekend and freeze the leftover pancakes to eat for the rest of the week.  All you need to do to to have them during the week is take out of the freezer and pop in the toaster (I sometimes put it through twice to heat it up all the way through) and voila!  Pancakes for the week!  Getting up has never been so easy!

Pancakes

1 3/4 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 egg
1 1/2 cups milk
3 tablespoons cooking oil

In a large bowl, stir flour, sugar, baking powder, cinnamon and salt.  In a medium bowl, beat egg slightly; stir in milk and oil.  Add egg mixture to flour mixture all at once.  Stir until slightly lumpy.  Pour onto a lightly greased pan.  (I use a 1/4 cup measuring cup to make the pancakes uniform size.)  Turn when pancakes start to bubble.

Letter to Pumpkin III

Hi.  It's mom again.  It's been a while since I last wrote but things have changed so much.  You and me specifically.  I am in my third trimester now and we are definitely getting bigger.  You keep growing and so does my belly.  I am feeling and seeing you flop and move and turn over in my belly.  Other people can feel you too.  Even though I know it's natural for you, I feel bad that you have to lay upside down in that tiny, cramped space in there.  I definitely can feel your foot.  It likes to pop out on my right side and I like to tickle it.  I can't wait to see that foot out here.  You get hiccups a lot.  It makes me feel bad that I can't do anything to help you, but it also makes me laugh to think of you in there hiccuping.  As for other things, I am all ready for you to be here.  We have your room all set up.  We had a baby shower for you where lots of nice people gave us nice thing...

Rhubarb Crostata

Did you know rhubarb is a vegetable?  I have a hard time picturing something so pretty and perfectly pink as a vegetable, but nature can be deceiving sometimes I guess.  This is a rhubarb crostata, or galette depending on if you are in an Italian or French mood.  Basically, it's a lazy way of making a pie, which is perfect for those easy, summer afternoons.  Rhubarb Crostata 1 9-inch pie crust about 5 stalks of rhubarb, cut into 1 inch pieces 1 1/2 cups strawberries, halved or quartered 1/2 cup sugar (plus additional sugar for top of crust) 2 tablespoons cornstarch (add a tablespoon of water to make a slurry) juice of 1 lemon (optional) egg wash (1 egg + 1 tablespoon water, beaten) Preheat oven to 400.  In a large bowl, add 1/2 cup sugar, cornstarch slurry and lemon juice to rhubarb and strawberries.  Fold gently to combine.  Roll crust to 9 inch circle on a sheet of parchment paper.  Transfer parchment to baking sh...
